Paul Bocuse被喻為法國 2021世紀最偉大的廚師之一,他在1961年獲得了法國最佳工藝師之頭銜Paul Bocuse所開設位於里昂近郊之餐廳,從1965年起年年皆獲得米其林三星之殊榮至今。為傳承法國料理文化,於1990年創辦了Institut Paul Bocuse餐飲廚藝學院,自從創辦以來Institut Paul Bocuse一直被視為全法國最頂尖的餐飲廚藝學校。學校的使命是傳遞最高標準的技術和管理知識,以使學生在世界上擁有最好的職業。

3.Specialization Pastry and Baking

In partnership with Lenôtre, this module introduces students who have already mastered basic culinary skills to the diverse world of baking, pastry and onfectionary providing the essential skills to succeed either in large production environments such as hotels or catering companies or in small production, artisanal environments such as boutiques or gastronomic restaurants.

4.Management Culinaire et Innovation

The Master’s program in Culinary Management & Innovation is built around production and operations management, design & technology and business strategy, complemented by a series of modules in human resources, marketing, finance and general management. This Master’s program, which is taught 90% in English, is delivered in partnership with the University of Applied Sciences Haaga-Helia of Helsinki, Finland.
